Borovička

RESERVA 43 %

RESERVA 43% is created by centuries of using the valuable properties of aromatic juniper berries of the Juniperus Communis variety, which is considered the most suitable for distillation. Their masterful evaluation has been dealt with by the masters of distillation in Spiš since 1797. The secret of the unique recipe of juniper berry processing has been preserved to this day and allows us to enjoy this elixir in its original form.

Only natural raw materials are used in the production of RESERVA 43% Borovička. The juniper spirit is exceptional thanks to its 7-stage distillation and maturation for 12 months in summer oak barrels ( Quercus robur), which give the drink an unmistakable delicate tartness. To enhance the flavour, natural juniper berry macerate is added.

The specific feature of RESERVA 43 % is the filtration which takes place at a temperature of - 9 °C. By filtering at this temperature, the drink becomes purer and smoother. The original, strictly protected recipe from Spišská Pálenice is a guarantee that Borovička RESERVA 43% will not have to worry about its popularity and consumer favour in the future.

Spišská pálenica is exceptional for its design and state-of-the-art technology used in the production of spirits. The distillery has two stills with a capacity of 2 x 1200 l. In 24 hours we are able to process 14 400 litres of fermentation on both plants, which represents 1 800 - 2 400 litres of 50% distillate. As a matter of interest, with the continuous operation of the distillery, this allows us to process up to 5,256,000 litres of kvass per year. The distillery is multi-stage, which is reflected in the distillates, which are of higher quality and purer.

In the premises of Spišská pálenice we have wooden casks with a volume of 300 litres, where our spirits are aged. The storage capacity of distillates in oak 300l barrels is 150 000 litres. In Spišská pálenice we have also installed French oak wood tanks, which have a volume of up to 35 000 litres. We have five such tanks. Into these tanks, the spirits are pumped from wooden casks and then stored in the tanks for several months to allow the flavours to mature and the spirit to mature.

The entire production process is based on an automated production system. This means that workers in the production process act in a controlling manner. The main activity is carried out using a programmed system. This has made the whole production process easier for us, from processing through fermentation to distillation.
